2 cups diced fresh pineapple
2 medium tomatoes, diced
1/2 cup red onion, chopped
1/4 cup fresh cilantro, chopped
2 jalapeno peppers, chopped
1 large avocado, diced
1/2 cup corn
3 limes, juiced
pinch sea salt
pinch black pepper
1. In a large bowl combine all ingredients, cover and refrigerate until serving!
Enjoy with tortilla chips or under a nice piece of grilled salmon
This recipe was concocted quickly as i discovered my family was coming over later that day. I love to entertain and always like there to be food available as it's something everyone enjoys. It just so happened 3 days before i had bought a nice big pineapple with no idea what i was going to do with it. It basically screamed at me, "Let there be salsa!"
Black beans would be a nice addition, I just had none available.
